My first batch was surprisingly good so I expect only improvements from now on.

Saw a four pound pack of bacon bits and pieces for $7 and decided to experiment.

Took scissors and cut meat from fat and separated.

Spread meat pieces out flat in biggest cookie sheet and baked at 350 till most of the liquid fat was out and poured fat off. Took two sheets.

Put in bowl with marinade while still hot and let stand overnight.

Put back in oven at 350 again spread flat and baked till they looked and felt like Jerky

Took fat pieces and fried till crisp and drained well and stored them for latter use in scrambled eggs, omlettes, salads etc..

Saved all the fat for later for biscuits, smoked potatoes, frying eggs, fried potatoes, pork chops etc..

No waste. Still had almost four pounds of product.

Caution: The bacon is plenty salty. Avoid salty marinades like Soy Sauce or Dales.
