It is the time of year again for Duck Casserole!!!!

I am not a big fan of ducks, it is usually too dry. However being from AR, the duck state, I have had many recipes for duck over the years and here is my favorite. I am making it today and as I type my three duck breasts are boiling. emoAngel

2 ducks or three duck breasts
1 onion sliced.
1/2 cup chopped onion
2 ribs of celery chopped
1/2 cup butter
1/4 cup flour
6 oz. can of sliced mushrooms
1 1/2 cup of milk
1 Table spoon of chopped parsley
1 1/2 tea spoon of pepper
1 package wild long grain rice
1 package of slivered almonds or about a cup.

Boil duck for two hours with sliced onion and celery. Cook long grain rice according to package or box. In a deep skillet melt butter, add chopped onions and stir in the flour. Add mushrooms and the liquid. Add milk, parsley, salt(to taste) and pepper. Add rice. De-bone ducks and add chunks to the other ingredients. Place all of it in a greased 2-quart casserole dish and sprinkle with almonds all over the top. Bake at 350 for about 25 minutes. mmmmmmm-gooood! emoHungry
