I was thinking of an injection this weekend, since the family is coming over. You know to spice things up.</p>

What?emoScratch I prepared a butt this past weekend, but it just wasn't to my liking. It smelled wonderful but Iwas dissappointed with end result (although my wife loved my buttand wanted more). I was thinking an injected butt would be much more flavorful.

This is what I have been using and so far its turned out great. This is Chris Lilly's recipe and someone at bbq-brethren suggested it.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
For the pork shoulder rub
1/4 cup dark brown sugar
1/2 cup white sugar
1/2 cup paprika
1/3 cup garlic salt
1/3 cup kosher salt
1 tablespoon chili powder
1 teaspoon oregano leaves
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
-----------
Pork injection
3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup salt
2 tablespoons Worcestershire

Inject pork shoulder evenly with injection solution. Apply a generous amount of rub onto meat. Pat so the rub will adhere. Place in a smoker and cook with indirect heat for 16 hours on 225°F. Serve with sauce on the side or paint shoulder with sauce the last 20 minutes of cooking. When done, the pork should pull off the bones easily. The internal temperature of the pork should reach 195°F.

I dont like injecting cause it hurts..............
Seriously, I dont do it because it never spreads thoguh the meat evenly, and you get pockets of flavor. I season the outside well, and leave it at that. Add a TON of good wood smoke and enjoy. My .02 anyway.

Minner try injecting with a 50/50 mix of good quality apple juice and apple cider vinegar. You will never notice the tastes but it will juice up your butt like you would never believe. Also try Foodsaver's rub. It is a good one. Before you do it though slather the entire outside of the butt with plain yellow mustard. Again you will never taste the mustard. It makes the rub stick better, the vinegar helps break down the connective tissue in the butt and the mustard/rub mixture make a wonderful bark on your butt. Make sure to do this the night before so the rub has a chance to set up. I promise it will be the best bbq you will ever eat. I have done pork butts about every way you can imagine and have settled down to this method.

I dont know bout cheeze, I dont like my butt with bark, I like my butts best smooth and shiny, oh honey is good on them too... oh wait that is ham
Some butts do better when ya smack em a few times .. softens them up

Personally, I prefer Wicker's BBQ Marinade on anything pork related. It is apple cider vinegar based with alot of seasoning. You can taste the chili powder and cumin in it. Good on chicken too. However I can't find it here in East TN, in West TN it is in every store you go to. Look iy up online

My wife does my butt injections, shes a nurse, so I let her take care of that stuff. :) I like to soak mine in a brine over night rather than injecting. 2 cups apple juice, 2 tablespoons sea salt, 2 tablespoons black peppercorns, 2 garlic cloves. Stir well and poor over butt in large pot. cover rest of butt w/ filtered water. Cover in fridge 12-18 hrs. Take out and pat dry w/ towel or paper towels, and cover w/homemaid rub.
