I fish for red fish in Fl and red fish are in the drum family. The red fish are great eating! But I have never heard of any one eating a fresh water drum. Whats the scoop?
That is a good question, I have wondered that myself. Red fish use to be considered a trash fish and now look. I have thought about grilling one and finding out.
I found them to okay, kind of soft texture and oily. I have had lots of fish that were not as good. I guess alot of it depends on how fresh it is and how it is prepared. Blackened/Grilling might be good, the one I tried was fried.
I've heard that the smaller ones are good on the grill. They eat baitfish like the stripers and cats, so I would assume that they are good eatin', though I've never tried 'em. Probably blackened would be a good way to try 'em. Hell, I eat all different kinds of fish from all over the world at least three to five times a week, so next time I get up to Watt's Bar, I'm gonna try to bring back one of those smaller ones. I'll let you know how they fare.
I met a fellow who was dressed in business attire as I was fishing from the bank. He saw me catch and release a drum then continued to watch me catch another one. He started yelling about the fish but I was in my own little fishing world and did not reconize that he was yelling at me. I unhooked the fish and nudged it back toward the depths as he arrived. He wanted the fish bad and was about to jump into the water to get the fish. I used my fishing rod to guide the fish back toward the bank as the guy layed down and raked the fish to him. He got it. An approximately Eight pound Red Drum He stated that if I caught more he would love to have them. I offered to him some smaller drum but he declined the two pounders. He said they were not as good as the larger ones.
I had to ask how he prepaired them. He said that he filleted them out quickly after being caught. Marinated them in a BBQ sause then grilled them. He said that Freashwater Drum was his favoritew Fish. I asked if he left the skin on on one side, "No".
Not Me, I have never tried then even though I see many people taking them home. Too many other fish that I have tried that I know I like.
A fishing buddy of mine( he happens to be from the ukraine) likes to fillet the drum and soak the fillets in 7 up and then deep fry them. He says it tastes like trigger fish to him!Never have tried them myself.emoScratch

Well, I'll not be the first one to submit a report on the culinary pleasures of the drum. I went to Nickajack yesterday after work, fished 3 hours and didn't catch a fish.
How does that old saying go " A bad day of fishing is better than a good day at work" ?
recipe for drum filets:
season filets to your liking put on a small piece of board (helps keep fish on grill) cook slowly and evenly on med high heat turning one time . when done take fish off board and let rest. EAT THE BOARD THROW THE FISH AWAYemoBigsmile emoBigsmile
Dig shallow pit.
Insert charcoal into pit, soak with lighter fluid, light, wait until they are red hot.
Place board across the hot coals and lay the filets across the board, wait until the meat is flaky.
Remove filets and throw away.
Eat the board, it'll taste better....
