Hoggerhead making the post about baked crappie got me thinking of an old recipe I posted on here a long time back. If you are looking for a new way to use crappie fillets you'll love this one. Try and use the freshest dill you can find. You can also use this with about any fish (I've used catfish before) but crappie works really well.
Preheat oven to 350
Lightly butter a non-stick baking pan or casserole dish
Place 10 to 12 crappie filets in skin side down, or if you skin them then the out side of the fish down
Pour 1/2 cup of Italian Salad Dressing (Zesty Style is good) over the fillets, making sure to coat all of the fillets
VERY Finely chop up FRESH dill, and sprinkle on fillets, I use about a handful, but you may want more or less depending on taste
Melt about 1 and 1/2 sticks of butter and crumble in a couple of packs of crackers, I use Ritzs but regular saltines will work fine. Mix the butter evenly over the crackers until all are coated, add a little black pepper for taste. Spread butter soaked crackers evenly over fillets. Bake in oven for about 30 minutes uncovered or until crackers are golden brown.
This is some of the BEST crappie I have ever had other than frying them in cornmeal. Most folks that don't like fish find themselves going back for seconds on this dish!
