Last year I caught so many crappie I had to find new and exciting ways of cooking them and I ran across a recipe on the net that turn out to be VERY good!

Preheat oven to 350

Lightly butter a non-stick baking pan or casserole dish

Place 10 to 12 crappie filets in skin side down, or if you skin them then the out side of the fish down

Pour 1/2 cup of Italian Salad Dressing (Zesty Style is good) over the fillets, making sure to coat all of the fillets

VERY Finely chop up FRESH dill, and sprinkle on fillets, I use about a handful, but you may want more or less depending on taste

Melt about 1 and 1/2 sticks of butter and crumble in a couple of packs of crackers, I use Ritzs but regular saltines will work fine. Mix the butter evenly over the crackers until all are coated, add a little black pepper for taste. Spread butter soaked crackers evenly over fillets. Bake in oven for about 30 minutes uncovered or until crackers are golden brown.

This is some of the BEST crappie I have ever had other than frying them in cornmeal. Most folks that don't like fish find themselves going back for seconds on this dish!

For those of you on a diet (I am a certified Personal Trainer and use this with clients) you can use the fillets with a non-stick cooking spray instead of butter. Add the same amount of salad dressing and so on. Use fat free crackers and "I can't believe it's not Butter" to sub for the butter. You be amazed at how this low fat recipe tastes!

My son asked me the other day if I had every had a six pack and I told him under the inch of fat around my middle was one at one time but it was more than likely gone by now.emoLaugh emoTongue Jmax

That is indeed me in the pic. You can't miss that blond hair on the lake so just look for me. I am a personal trainer and used to compete in bodybuilding shows and powerlifting events.

As for that recipe making you look like the picture you'll just have to give it a try. If your son asks you if you have a six pack just tell him what I tell everyone; I had a six pack when I was younger but now I just carry around a keg!

I still have got the muscles, I still workout about 5x per week. I am actually competing this coming Saturday (the 25th) in the North Georgia Natural Bench Press which will be held at Flintstone Fitness in Flintstone Georgia. I'm pushing 47 now and have lost some power due to injuries and so on but I can still bench around 400 on good days. For this meet I'll stay at a fairly modest 365 lb lift in the Masters over 40 division. Anyone that wants to watch is welcome to come. There is no admission and there will be some powerful guys there, not to mention a lot of teenage lifters just getting into the sport which we all like to encourage. I really like this meet because it is DRUG FREE, an issue that is destroying a lot of sports right now. More kids are using 'roids than ever before. I'm drug free and proud of it. I COULD use and really get up there in the 500 lb lift classes but I want anything I win to be just me, no help from a needle.

Jmax, you can come to my house and we pump iron and look like Fishnfool. It may take 10 or so years but we can do it. I'm 46 and used to have some muscles but my chest fell into my drawers.
 
I have to admit it is I believe polo's personal spot however I found it on my own and than we figured out we had the same hole.emoLaugh emoLaugh The first time I ever asked polo about it I believe his reply was "I would tell you but than I would have to kill ya." I am not going to give that spot away due to my life might be in danger.emoBigsmile Jmax
