Last year I caught so many crappie I had to find new and exciting ways of cooking them and I ran across a recipe on the net that turn out to be VERY good!
Preheat oven to 350
Lightly butter a non-stick baking pan or casserole dish
Place 10 to 12 crappie filets in skin side down, or if you skin them then the out side of the fish down
Pour 1/2 cup of Italian Salad Dressing (Zesty Style is good) over the fillets, making sure to coat all of the fillets
VERY Finely chop up FRESH dill, and sprinkle on fillets, I use about a handful, but you may want more or less depending on taste
Melt about 1 and 1/2 sticks of butter and crumble in a couple of packs of crackers, I use Ritzs but regular saltines will work fine. Mix the butter evenly over the crackers until all are coated, add a little black pepper for taste. Spread butter soaked crackers evenly over fillets. Bake in oven for about 30 minutes uncovered or until crackers are golden brown.
This is some of the BEST crappie I have ever had other than frying them in cornmeal. Most folks that don't like fish find themselves going back for seconds on this dish!
For those of you on a diet (I am a certified Personal Trainer and use this with clients) you can use the fillets with a non-stick cooking spray instead of butter. Add the same amount of salad dressing and so on. Use fat free crackers and "I can't believe it's not Butter" to sub for the butter. You be amazed at how this low fat recipe tastes!
