Wine and Cheese Sauce Fish Recipe
Here is Jack's Cheese and Wine sauce recipe. He says it is a simple recipe.
Preheat oven to 350

Ingredients

Bass filleted and cut into serving size pieces.
Chedder cheese or about any other kind of cheese you may prefer or have on hand. I like three or more kinds.
Chopped onions
Chopped green, red, yellow peppers or what you have on hand
Green onions are ok too.
Sour cream.
Medium dry white wine
Olive oil
Salt and pepper to taste
Parsley flakes or other spices that you like
Lightly salt the fish and rub lightly with olive oil and place them in a baking dish. Drizzle a little wine on the fish. let stand.

Sautee the onions, peppers etc. until soft and the onions become clear. Add spices.

Add the cheeses and melt them over low heat.

Add a little of the wine if too thick. Add sour cream and about 3/4 cup of wine. Stir until consistency that will pour.
Pour mixture over fish covering each piece carefully. Bake until the fish flakes easily with a fork. Add A light coating of Parmeson and turn oven to 500 for about 4 minutes or until they begin to brown. Watch carefully not to burn the cheese.

Serve hot with sides of your choice and the white wine. I like Rhine wine myself but any medium wine works fine.

I used filets from three small bass, cut in half. Also used 1/2 onion, 1/2 bell pepper and a small container of sour cream and a 8 ounce pack of shredded cheddar cheese. Excellent and was enough for me and my wife, with enough left for me another meal. Made enough sauce to go over the broccoli and baked potato, too.
