Friday night I started the pork butt in anticipation of one of my favorite holidays of the year... the first Saturday of College Football. I injected the pork butt with Chris Lillys injection and then rubbed it with SM Spicy apple.

Saturday morning I got up and prepped the wings and the baked beans for the smoker. I coated half the wings in magic dust for the hot wings and the other half in SM sweet and spicy for the bbq wings. The baked beans got some blues hog and a lb of bbq mixed with chopped onions and green peppers. Mixed up a batch of quick cole slaw and the sides were ready to go.

The pork butt was done around 11:00 which was about 5 hours earlier then I expected it to be done.

I Jacked up the temp on the smoker around 1:00 and had the wings on at around 300 degrees. I flipped the wings every 30-45 minutes and then finally dipped the sweet and spicy ones in some blues hog and the hot wings in some Louisiana hot sauce that had half a stick of butter, some cayenne pepper and some chili powder mixed in with it. The bbq ones were the best wings I have ever had and I will only be making them in the future.

here is the pron.
