butternut squash

I baked a butternut squash and froze it when a guy gave it to me last fall. Thawed it out and looking for a way to cook it. My mom used to make what we called butternut squash soufle - creamed and baked with brown sugar - marshmellows on top but don't have the recipe. Any ideas or other ways to fix it?
 
Ronnie I was raised on butternut squash and it is still one of my favorite veggies. Most folks do the cinnamon/marshmallow thing like yams but my favorite way is to either cut in half longways and bake untill tender or to peel it de-seed it and steam it. I just mash the squash and put butter,salt and pepper on it. No masking the great squash flavor for me.

My favorite way to make butternut squash is to take it and cube it up. Put it in a baking pan and cover it about 3/4 of the way with heavy whipping cream. Then take and sprinkle about 1 cup of dark brown sugar over the squash. Put in a 350 oven and cook for about an hour until the squash is tender. Lots of people who i have made this for that hate squash of any type, tear this up.
 
Thanks for both of yall's suggestions - will keep them for next time.

I found a recipe that sounded like what mom made. Mashed up the squash and added some Log Cabin syrup (called for Maple but I didn't have any), some brown sugar, butter, cinnamon and nutmeg. Topped with chopped pecans and brown sugar and baked for 30 minutes, topped with marshmellows and baked till they melted and browned.

Needed more sugar, not as good as mamma's, but most food ain't, but not too bad.
 
i'm with ya cheez, i haven't had squash in a long long time, but i need to find some since you reminded me of the wonderful squash, butter, salt and pepper mixture. makes my tastebuds dance and brings back fond memories at the same time.
