have you folks ever tried canning venison,if not you have no idea what you are missing, all my back strap goes to the freezer but the rest goes to the jars,ive canned 21 quarts of ground venison and 24 quarts of cubed meat so far this year,it taste as good if not better than beef in my book and lasts alot longer than frozen meats,its easy to do and worth the effort.give it a try you wont be sorry,the meat is so tender and canning takes the wild taste out, you can bbq, it stew it fry it ,bake it or grill it.i have some great recipes i love to use on it, have fun hunting folks its not always about the kill but it helps lol.
 
I guess it just seems like it would be very time consuming. I plan on doing alot of canning next fall, so I may keep this in mind. How do you know when it exspires? Smell it.... Lol Thats what I usually do anyways. emoHungry
 
ive kept it for a year and a half before useing my last jar and it tasted as good as it did two weeks after canning but i would try to use it between seasons,it does take some time but once its all said and done it is worth it,just cut it up into about 1/2 to inch cubes you can brown the meat or raw pack it ,place in jars and add 1 teaspoon of salt to each quart and add water to 1 inch from the top,wipe clean the jar rims add lids and pressure can the meat fo 90 minutes on 10 lbs pressure. you can find all the info on the net just look up canning venison
