Man I love to eat these things and so do several folks that I am sharing them with. Lost count on the total number caught this AM but did keep these, Caught on cut Skipjack. I had my oldest son and his buddy out there today. I could not get them to leave when we had planned. They had a blast. No big fish today over Ten pounds.

They look like they are ready for a Hot Oil Bath!!! Way too go! I'm hoping to get a few eaters tommorow.

Liveliner, how do you like them cooked best? I like mine fried but I am interested in trying new ways to eat them.

Polo, sometimes I will spice them up and put them on the grill. Yummy! Need one of those basket type things to turn them over so that they don't fall apart. You know, the things that you sometimes put burgers in? Flat, with a hinged lid.
 
I am planning to grill some today.

The way that I normally cook them is in the deep frier. And very simple. I don't try to mask their wonderful flavor with spices except for black pepper that only helps their taste.
I clean them well and remove all the red meat and fat at the fin areas. I think that the step of washing them in cold salted water brine for about five minutes is the key. As you wash them you can feel the fat coming of them and feel them start to firm up. Do not soak them for much more or less than Five minutes. This will give them the salted taste we prefer. Less time for less salted taste and more for more. After the brine bath, wash them thouroughly in cold water until you can feel that the fat is washed away. At that point I lay them out and sprinkle them with fresh black pepper. Then back in the bowl to saturate them in the pepper. With most fish I use a batter mix of two parts corn meal and one part flour. However with these Catfish I prefer only cornmeal. Coat the catfish filets and drop them into preheated hot oil in the deep-frier. Cook them at high heat and quickly then put them on a drainind tray. I have found that quick cooking them makes them much less oiley that pan frying. "YUMMY"

I had been catching and releasing several cats and never targeted them very hard until I ate the catfish that you served at the picnic. That fish you cooked is the single most reason that I started fishing at the nuke plant and keeping blue cats. I was not aware and in fact I was not concerned about any toxins in the river catfish. I checked into it and found that fish are clean and healthy in Chickamauga. Therefore it has been "ON" since you got me started.

So, with all that being said, "Yes' Your fish were good."
 
I know ya'll can't tell by looking at me but I love those slimy little critters too. I'm like you LL, I wouldn't fish anywhere in the TN River because I thought all of the fish were contaminated. Paulj and a couple others however got me started crappie fishing at Chickamauga two years ago. Because I'm from out of state I began studying the TN regs and found out there was no restrictions on eating fish in the chick. I like to fish and I like to eat them and cook them for others so here I am. I fished Weiss for over 30 years and can hold my own down there but the crappie,bluegill and catfishing is better up here. The bass and striper fishing is better at Weiss but I don't bass fish much anymore.
