I was told that when you get a load of the monster shellcracker that you can fillet them, cut them into good size strips and boil them in crab boil and they come out almost like shrinp or lobster. Does anyone have any experience with this or even heard of it before I ruin a good batch of fillets? emoScratch
 
I suggest simmering in a shallow pan or skillet, not a full boil in deep water. Crappie and bluegill also work good. For a change of pace, use lemon pepper on the fillets, then after cooking squeeze some lemon juice on them and dip them in clarified butter (like you would do with lobster or sometimes crab).
