Deep fry it! No question. I got into deep drying turkeys a couple of years ago. It's incredible... REALLY maintains moisture, especially if you inject them. No "dry" turkey when you deep fry, which is even more important with wild birds.
 
If you just cut out the breast like many guys do, slice the breast into strips like chicken fingers, batter and fry like chicken. One thing to always keep in mind is that like any other bird refrigerate it at least overnight to get the body heat out. Cooking wild turkey with the body heat still in it gives it a really strange taste. I believe this is true for all warm blooded critters.

Marinate the bird in Zesty Italian Salad dressing. Cut several deep slices in thick areas like the brest and thighs and inject or fill the cuts more marinate. Make sure that your oil is 350 degrees before you drop in the bird. Deep fry untill the skin is crispy. "There ain't no better way"
 
I've done, well rephrase that .. hubby has done 2 or 3 deep fried turkeys. emoVomit Not a one of them was worth a tinker's darn. We marinated and deep fried ... and threw them in the trash .. all of them. Either he doesn't do them right .. or we just don't have a "thing" for turkey cooked that way.

Now smoked, baked, roasted and rotissarried .. emoHungry Bring it ON! :)

No way they were done right TT. I don't know what happened but properly done fried turkey is the best there is. I do 2 or 3 for our church Christmas dinner every year and they are the first to go from the table. I get more hugs from the ladies at my church for the fried turkey than I can stand. PM me with the procedure that your hubby did and I will try to see what he did wrong.

I marinated the two breast in Dales for 24 hrs and cut them in up. Placed them on the georgeforeman grill. Man thats the best wild turkey I've ever had....
 
I like to cut it up in strips, and mix some buttermilk pancake mix (not real thick) in a tupperware bowl. Place it in the mix, and leave it in the fridge all day. you want that batter to soak in real good. Then I take it out, sprinkle some Creole on em, and fry it like chicken!!! If you roll it in flour before you fry it, I found it was to much batter taste, but some liked it rolled, and some not!
