Here is a good receipe for cornbread fritters that I make for a fish fry.

3 parts cornmeal, 1 part flour
medium onion chopped
sweet pepper (any color) chopped
red pepper flakes to taste
1 tsp cummin
1 tbsp salt
2 tsp black pepper
1 tsp sugar
1 egg
1/2 can beer

Thorougly mix dry ingredients.
Mix in wet ingredients until batter is stiff.

Peanut oil in cast iron skillet and get it hot.
Spoon in batter and cook until you see bubbles on edges of fritter
Turn fritter over and cook until desired browness.

Sounds great Dickey, ever try and deep fry these?

Deep fried they ball up and become hushpuppies. I love me some corn fritters.

I forgot when I originally posted this, but I also add about 2 cloves of fresh garlic, chopped fine.
