Breast them out, soak in cold salt water for 1-2 hours (change water 2x), soak the breasts in italian dressing for 4-6 hours in fridge, wrap in bacon and grill. Remove when still rare, wrap in foil and let rest for 20 min. They will continue to cook to med/rare while resting. This is the easiest way to prepare them...or slice into thin strips and put into pan with sauted celery and onions, olive oil and butter, little bit of salt and plenty of pepper.
