Had a good time this morning near Harrison Bay!

Breast them out, soak in cold salt water for 1-2 hours (change water 2x), soak the breasts in italian dressing for 4-6 hours in fridge, wrap in bacon and grill. Remove when still rare, wrap in foil and let rest for 20 min. They will continue to cook to med/rare while resting. This is the easiest way to prepare them...or slice into thin strips and put into pan with sauted celery and onions, olive oil and butter, little bit of salt and plenty of pepper. Serve with wild rice...

I like to breast them out, marinate in Dales or similar and then grill like a chicken breast, except DO NOT COOK well done, or you will feed it to the dogs.. emoLaugh
 
Similar to folks above... I like to cut them in strips, marinade in teriyaki sauce and then grill.

As Spur said... do NOT overcook.
 
Think BEEF when cooking it, not chicken. Goose has a texture more similar to beef. The best one that I have found is to breast it, cut it in strips and country fry it. Another thing to try is to let the birds sit for a couple days before cleaning them. Lay them breast up in a cool place (40 degrees or less). Then breast them out. Aging them makes the meat less tough and the taste is better.

They are also good as a substitute for beef in beef stew.
 
Thanks for the help guys. A buddy of mine told me to wrap them in bacon with jalapena and onion inside. I did this and cooked on the grill for about 10 minutes. They were delicious. Still have plenty of meat left to try some new recipes tomorrow.
 
Breast out your goose and cut the breast into dime size chunks
Put goose chunks into a bowl and marinate with "Lawry's Sesame Ginger with mandarin orange juice" sauce
Let it sit overnight in the refrigerator
Take a frying pan, put a little oil in the pan and get the oil hot
Put the goose into the frying pan and fry the edges.
When the marinate heats out of the goose, take the goose chunks out of the frying pan and strain it.
Put Goose back in the frying pan and add a bottle of teriyaki sauce and bring to a boil. Then strain the goose chunks again, and put aside
Take a mexican wrap about six to eight inches round, and put a little pile of goose chunks in the middle. Cover with cheddar cheese and then pour "Sweet and Sour" sauce over goose and cheese.
Then wrap that mess up and tooth pick wrap closed.
Put a quarter inch of oil in a frying pan and heat up till medium heat.
Put burrito into frying pan and brown both sides. You can tell when done, when the burrito is brown and crispy.
Serve hot!

Have you guys been seeing many ducks this week? We saw a few mallards this morning but couldnt get them to work at all.
 
Best Goose Recipe

Bring a large pot of water to a gentle boil
Add 2 goose breasts
Add salt and pepper
Add one small rock
Boil till rock is tender
Then throw away goose and eat the Rock.
 
Ducktruck has shot a few birds. Dales marinade and then sliced thin and onto the dehydrator for mine. Great mid morning snack in the blind or a snack on the road.
