I put them in a freezer bag and fill with water to cover fillets completely, date the bag and they'll be good for a year or two and long as the water covers the fillets.
 
We've used the water packed way for years using as little water as possible and still getting all the air out of the bag. We now use the vacuum pack because it's so easy. They both work great. Basically you just need to eliminate the air from touching the fish. Be sure to date the bag.
 
Using as little water as possible is achieved with over filling a zip-loc bag and after you have sealed the opening almost all the way squeez air and excess water out of the small opening. If no air is in the bag you can just allow the water to drain out in the sink.
 
We use the vaccum pack because it takes less room in the freezer. I have not had a problem with freezer burn since starting to use the Seal A Meal.
 
I use the water method described by Tndoe and have used the vacuum system in years past, but not with good results. The water method never fails. emoBigsmile emoGeezer
 
allso what is the best way to fillet them it looked like like i lost a lot of meat the way i done it and it took a lonk time even with an electric knife

Sounds like you need a lesson on the how-to portion of filleting a fish. It is really simple with an electric. Make the first cut just behind the gill plate, down to but not through the backbone. Turn the blade 90 degrees and run along the backbone down to the tail cutting through the ribcage in the process. Flip the fillet over (skin side down) and beginning at the tail, cut through the meat down to but not through the skin and repeat process. Turn the fish over and repeat process. You will now have 2 fillets that just need the ribcage cut out. It's a piece of cake. emoBigsmile emoGeezer emoTeacher

to get perfect fillets every time just takes practice but once you get the "feel" for it it is a a piece of cake.

oh and make sure your blades on the electric knife are very sharp!

nothing ruins a good fillet like a dull knife electric or not .
