I've been on the Walleye pretty good as of late so needless to say I've been eating good emoHungry I've grilled em with butter/lemon and sea salt, I've baked em with Ms Dash Garlic and Herb shake, and of course I've fried em traditional, flower, salt, pepper, egg wash....

So today being the rainy day it is, what better day to do a little experimenting. I had a friend give me a really simple recipe for fried Walleye that called for Flower, Cornmeal, and Dijon Mustard as the wash coating. I'd never tried Dijon as the wash so I figured I'd give it a try. I had cheap Spicy Dijon Mustard in the pantry so I used it and I add a few other ingredients to the flower/cornmeal mix. This ended up being the best fried fish I've ever eaten, and I'm not a big fan of Dijon Mustard but it actually gives a great taste and aroma when fried and the flower sticks to it well and turns really crisp. I also added 1 tbsp of Honey to the Mustard. Here's what I did.

approx 2lbs Walleye fillets, cut in quarters.
Wash: Spicy Dijon Mustard and 1 tbsp of honey
3/4 cup flower
1/2 cup cornmeal
1 tsp baking powder
1 tbsp salt
1 tbsp pepper
1 tbsp granulated garlic
1 tbsp smoked paprika
1 tbsp chili powder
pinch red pepper flakes

I highly recommend trying this.

Louie, just how are you catching Walleye at this time of the year, in this heat?

They are very finicky this time of year. By the looks of them they are feeding well though. To catch them this time of year you have to get a bait right in front of them and hope they reach out and touch it.

I'm using gay blades/silver buddy's. 30-60ft deep over submerged timber. If you haven't looked at my last few posts on the fishing reports section, check em out. WE've caught a few 6's, 5's, and 4's. The best day I've had we boated 7 total.

Looks awesome Louie. I've been reading your reports thinking, man i can't believe he's not throwing some of those walleye in the grease...now i know, lol. Thanks for sharing the recipe, now if i can actually ever catch a few i'm gonna have to give it a try.

Yep, Walleye are my favorite fish to eat.

Hey Louie, Great looking plate of Fish. Yum! I have never tried the Dijon or any mustard for that fact on fish before But some friends of mine said just what you did, that it is some of the best tasting fish that they had ever eatin. I will be trying it soon now, my wife is from Wisconsin and they have Friday fish fry's up there and Son talk about feasting! Cod , perch, and walleye.
