I cooked some chunks of the blues we caught last friday w/ EricM and they are very very fishy. Is there a way to get that extra stout taste out of them? I have always been able to get it out of other fish but not these?

Brother Cheez will eventually get on here and answer your question, he is the catfishing/cooking/eating guru of this forum.

Are you sure EricM didn't slip some skipjack in with those cats! emoBigsmile

I never eat catfish, but I have heard to always make sure any fatty red streaks were cut out and that soaking it in lemon water might help. How did you prepare it?

David is right on. Heath if you left the fat and the red meat on those blues they would be nasty and fishy tasting and no amount of soaking in anything will remove the taste. Remove ALL the fat and ALL the red meat and you will have some of the finest tasting fish that swims.

After you do that and have just the fine white meat of the fish. Take a couple eggs and about a cup of water, milk or beer(whatever your taste is) and blind it. Put the fish in it and soak it about an hour. Take it out, roll it in yellow corm meal with a little cajun seasoning, parsley, and lemon pepper. Cook until golden brown and pig out.emoHungry Jmax
