Well, the meat is off and wrapped in foil for tommorow. I smell just like a smoker, but man I love "real" smoked meat!! I will take some pron pics and post when I serve it. emoHungry emoBigsmile
Any of yall ever smoked fish ? I tried some smoked amber jack once down in the Keys .. man was that ever fantastic ! I wonder what smoked freshwater fish would taste like smoked .. the only smoked freshwater fish Ive ever seen was trout and salmon.. any one ever tried spots, crappie etc ?
Spur, I smoked 4 big butts friday and my shed looked about like that or worse, someone stopped and wanted to tell me that my house was on fire and then a cop came to check also, the cold damp air makes the smoke hang close to the ground. I fixed myself 2 butts and cooked 2 for the neighbors. I can cook 4 just as easy as 1. It is pulled now and put in the freezer for another day.
When I was a kid in Ohio my father and his boss would smoke all the fish they caught. They had a smoker made from an old refrigerator. They always smoked Channel Cat, perch, and sheephead. Last summer I smoked some catfish. They really turned out well. You should try them sometime NRG!
Turned out great. As you can see from the pic, the bone pulled right out completely clean....THAT is smoked pork done right. Some baked beans I doctored up, chocolate pudding and a salad. 6 butts severed 75 folks today. I need a bigger smoker!!
