DOES ANYONE KNOW OF ANY GOOD WAYS TO FIX HYBRID EITHER ON THE GRILL OR IN THE SKILLET?

I like to put a filet from a 3 or 4 pounder in a baking pan, lay strips of bacon on it then onion rings and bake it for about an hour. The bacon and onion remove all the strong flavor - I don't even cut out the red strip.
 
Always start with nothing!

1. Skin and fillet and and cut out the stripes and grill. No nothing. Amazing how good most fish taste with just a little salt.

Then...Did you like it? What didn't you like about it? What does it need?

Add: Butter? Lemon? Pepper? Dill? Tartar Sauce? Sparingly

To me, breading obscures the taste, but if you like it find out how you like the fish first.

Hybrid, or rockfish is the same quality of meat to me. One of the best fish you can start with, as long as you trim everything off, no red, no fat, no skin. Get it to the white meat, and then you can cook it any way you want. I like grilled myself. Season with most anything, add a little olive oil, use a very hot grill, and sear both side. If they are too thick, and need more time, pop them in the over for about 4-6 minutes on broil.
