Hey man, try this recipe for spots.... its from Homer Circle and delicious for bass.</p>

take white flour, and season with Lawry's seasoning salt... 1 tbsp per 1 cup.</p>

Did in Buttermilk and dredge in flour... release in 350 degree peanut oil.</p>

Puddle I think it makes a world of difference. Can't beat the peanut oil. A little zatarians, some corn meal and salt and you are read to rock!
 
I like the Martha Whites bleached white corn meal, mixed with Tony Chacheres...or now I also like Chef Pauls seasoned breading mix.

PJ I cook fish about every week at home. I also cook fish on a large scale (100 to 700 people) several times a year. Peanut oil is good because it can take a little more heat than vegetable oil. However it is nearly twice the price. I use what the restaurant supply houses call "Clear Fry" It is vegetable oil and does not impart any taste into whatever you are cooking and properly strained after use it can be used many times. If you are going for taste and nothing else matters then pure lard is the way to go. I'm sure the health police will have fun with this but in the words of the most famous chef in the world.

I had a small fish fry for folks after church yesterday, and modified this recipe.  I used Zatarans (sp?) Southern Style fish fry instead of the white flour.  the buttermilk and Zat's was just absolutely delicious.  I had people pounding their fists on the table... thats a good feeling!!!
 
For small meals, I use Virgin Olivie oil. Really adds some favor. </p>

Pancake batter mixed with a good med dark beer, like Sam Adams, cover the fillets and fry away. MMMmmmmm
