Caught some nice Kingfish this weekend, and kept a few too. Here's how I did 'em up.</p>
Ingrediants - Kingfish fillets (i did 10 6 ozers),1 lb of Bacon, EVOO,1 bottle of your favorite italian dressing, 10 slices of Provolone Cheese,fresh cracked black pepper, and creole seasoning</p>
Filleted out Kingfish, leaving skin on. Cut the fillets into roughly 6 oz servings. Marinate fillets in Italian Dressing for 2 hours. Cook the bacon in the microwave for about 2 minutes to get it started. After two hours, pat the fillets dry, and wrap in slightly cooked bacon. Season bacon with black pepper and creole. Turn broiler on high, and place fillets, skin side down, on broiler pan. Broil fish 1.5 inches from heat, for 7 minutes. Remove, and place provolone on fillets. Broil for another 2 minutes.</p>
