Jmax's Gumbo for left overs. It is the time of year we seem to have left over turkey and if it gets to where you want to try something different...try this.

About five to six cups of diced turkey, chicken or duck.
1 onion diced
1/2 bell pepper diced
1/2 hot green pepper diced.
1 cup of shreaded spinach
1/2 cup of salsa
1 can of dark Kidney beans
1 can of diced tomatoes
1 can of tomatoe sauce
1 pack of chilie mix
Cajun seasoning or monkey dust
Crushed red pepper
Powered garlic
Texas hot sauce to taste
With the can stuff add the water in it as well, do not drain it.

Take just a little grease or olive oil and spread it in a large skillet. Put in the onion, bell pepper, green peppers and saut'e until the onion clears. Add your meat(Left over turkey, shrimp, burger, chicken, duck, goose or just about any combination emoSmile ) Keep in mind this meat would have already been cooked. Heat the meat, add chilie mix, spinach, salsa, Kidney beans, diced tomatoes, tomatoe sauce and a couple cups of water(3 or 4). Bring to a boil and stir. Now add Crushed red pepper (1 or 2 table spoon), monkey dust or cajon seasoning to taste maybe 2 or 3 table spoons, garlic and then a couple table spoons of hot sauce(4 or 5). Mix it up all real good and heat it up until it starts to boil again.

You can also add rice to the mix but to me that is too much trouble. I don't like cooking rice.

You can put shreaded cheese, parsley, sour cream, chopped green onions or just about any other item on top to garnish the gumbo. I like to put cheez-its on top of mine. emoBigsmile
