I've just tried the best Fish-N-Chip batter I have every had.....

McMormick makes several different boxes of fish batter. (cajun, country, etc, etc,)
But the plan old one marked Fish-N-Chip batter is the best batter fryed fish I have every had. Easy to make, you just mix it up with water, dip your fish in it and deep fry (you have to deep fry with this batter, you can't pan fry)......The batter taste something like Captain "D's" or Long John's batter.....This is the first time that my wife has ever liked eating fresh fish. I made the best crappie I have ever had last night and now will make again very very soon.

That is some good batter mixed according to the directions. You can make it even better by substituting the water with beer. If you have a problem with the alchohol part you can use nonalchoholic beer like Odouls or Sharp's. The batter will be more fluffy and crispier. 20 years ago I used wet batter all the time but went to cornmeal based breading when I started frying larger amounts of fish. Breading is easier and faster.
