This is in addition to the how to choose a prop thread in Gen Fishing.
Here are a couple of prop calculators that are fun to tinker with. As a general rule, 10% slip is a pretty reasonable number to factor in. Play around with it, try a few different things, see what numbers you come up with. I have found it pretty close all the way over 100mph.

There is also a pretty cool feature for those of you running mercs (other manufacturers may have a similar setup). On their site, merc has a prop selector where you can input certain things about your boat and motor, and they will suggest certain props. They only recommend merc props though, and there are some good props out there by other manufacturers that in some cases will run better (ex. a turbo, runs faster and has better bow lift than mercury's mirage plus).
