OK - this is not a joke. Anybody got a good beaver recipe?

I shot a young one this morning in my pond - got the backbone and hind quarters soaking in salt water. Always wanted to try eating one - have heard they are good and the meat is pretty. Trying to come up with a good way to cook it.

Thanks - if you google Beaver Recipes you get 1,020,000 hits - I checked out several before posting but hoped to find someone here with personal experience. Got it soaking in saltwater - cut a few steaks off the backbone to grill, gonna cook the rest in the crock pot -just not sure how. Maybe with onion soup mix, maybe with BBQ sauce.

I have thought of a few dozen jokes to go with this but better leave them out.
 
For anyone that cares - I cooked the beaver in a crock pot most of the day yesterday with onion, bay leaves, celery seeds. garlic and pepper. Then took most off the bones, dredged it in flower and browned it in oil. Put the boneless pieces in one baking dish and the bony pieces in another, added a cup of the juice from the crock pot and baked it at 300 for two hours. That recipe is called Mississippi Pioneer Baked Beaver on http://fooddownunder.com site.

It is a little tough and stringy, but tastes just like dove to me. I heard it tastes like goose - I have not had much goose but this meat is more moist and more stringy that goose, but has that same taste. I like it - served with mashed potatoes, biscuits and garden peas, with some gravy from the drippings, pretty good meal. I will clean the next one I shoot too.

Gonna try the tail of the next one - many recipes for it, and found instructions on how to make a cute purse out of the skin. Wife says no thanks but will problaby make one anyway.

Found a pack of Black Angus filet mignon on sale this week - marked down so three small filets, about one pound total, was only four dollars. Grilled it tonight with the beaver steaks I cut - the beaver was much tougher, but I swear it tasted the same. Of course I have a cold, and Linda said the filets were not real good for some reason. She would not touch the beaver.

I cooked the filets to medium but cooked the beaver till it was well done - may be one reason it was tougher. It still had a good flavor much like steak.
