My brother-inlaw always cleans ours and I go have it processed. But he always throws the ribs-heart and liver away, But I only started deer hunting about 6 yrs. ago and not real sure about the heart and liver, but seems like the ribs might be good on my smoker and if they are worth it. He say's no , but I don't like to waste any meat, most of all venison.
 
The meat on a deer rib case may look good before cooking but unless you have a cow of a deer it cooks away. The meat shrinks once you start to cook it, not much fat on deer ribs at all and you will find that once it is cooked fully it is just not worth the trouble. He is correct.
 
Thanks ! Jmax, I don't want to go through the trouble if that is the case. i'll just keep eating the good parts, I love the way Dons does their deer summer sausage.
