Churly, wash the peppers and stuff em in a fruit jar, pour boiling white vinegar over them and put on the jar lids. Fix the bananna peppers by themselves and the peppers won't be hot or add a jalapino or two to the jar to spice them up some. Mighty fine eating with pinto or white beans. You might want to set the fruit jars in some hot water to get them warm so that the boiling vinegar won't crack the jars.</p>
Do a search on google and look for pickled peppers, you should find about a million recipes. </p>
Churly I do what Doc says only I drop in a clove or two of garlic. You want to do a little more than set the jars in hot water though. You need to boil them for about 10 minutes to sterilize them Then put the peppers and boiling vinegar in them.
Well Doc the Ball Blue Book of canning says to boil all your jars no matter what you are putting in them. That is what I was going by.
Brandon it takes a few days for the peppers to get "pickled" A couple weeks for them to get real good.
Well, I plan on pickling tonight, so I'll have us some pickled jalepenos next time we hook up Brandon! I need to get back down to the "Gunny Hole" soon.

I agree with Foodsaver on the smoked/grilled items too. Yoiu can slice the peppers lengthwise and then marinade in poppyseed dressing for about 2 hrs. Then grill and serve as a side to grilled shrimp, bbq, steaks or chickens on the grill. Dang.... now I'm droolin' all down the keyboard....
PJ okra and pickles can be done this way but they are better if there are some herbs and spices used. Dill, garlic, sugar and some others. There are lots of recipes for different kinds of pickles.
I have had quite a few pepper patches. I don't boil the vinegar Personally it makes my "pepper" soft. But I do set the jars in boiling water to seal them. My favorite is bell peppers cut into strips then place one habernero pepper per jar.
