recommendations on deep sea fishing , locations , which captain, boat ?

My sisters and I want to take my aging brother, who just turned 80 , deep sea fishing probably in Destin, Fl. I think several of you went down last year and reported good catches in Feb. and early March . Would some of you share some info and recommendations of where you think would be good time and place > he is also on dialysis every other day and we feel like this will be our only chance to help him with one of his last wishes while he can still get around . Please respond asap so we can get plans made and Thank you all so much

Bay trips out of appalachicola are a lot of fun and pretty reasonable. Also TJ Cheek off of St Simons is a great guide as well.
