I'm looking for a recommended cook book for sausage making. I made some Italian last weekend and it turned out "OK" but needed more fat and a little less All Spice. Still very edible though. </p>

There's a TON of recipes out there and its all mind boggling when you research online. There has to be a #1 book that comes with an excellent review. </p>

They look good, Billy. Try Waltons Inc. .com they have books and everything else you need-all the way to commercial machinery
 
Finding fat seems to be the biggest problem, if you find a good source, don't tell anyone! ( but me )
If you're shooting for a 25-28% fat content, you'll usually only get about 15% max from a pork butt. The guy I'm learning a lot from makes it up with cheap unsmoked bacon.
I just got a book today from my brother for Christmas that has some good looking recipes. It's Bruce Aidell's Complete Sausage Book.
 
Yea the fat is an issue. Diane bought some fatback?? Had a lot of fat on it and seemed to work well with the brawts I made. BTW...those turned out great! Ill look online for that book! Thanks bud!
 
If i pop another wild boar, your welcome to the fat. 2 of the 3 i shot last year were covered in it and it would be easy to remove and pack on ice. Im keepin the meat.lol
