Smoking my first Butt

I bought Doc's old smoker about 3 or 4 weeks ago and finaly thursday morning I started smoking. I got the temp steady and it smoked good for first 2 hrs then the winds picked up and it got cold when that front moved through. I had to work the whole time keeping the temp steady. I had a gig that night from 9 til 2 am so I had to get a little rest so I finished the last 3 hrs in the oven at 225 degrees. It turned out to be awesome as I used an ejection. The meat was so tender. I like cutting some of it cross grain and dipping that into sauce. By the way I made the sauce too. I use Chris Lilly's recipie as a base. You gotta try his base. I purposly got some drive thru BBQ (not naming names, but they got a whole bunch of them and it ryhmes with DO DO) the night before so I could show my gal the big difference. Now she wants me to learn all I can about it..HA HA

Good looking pig meat there Channing. If you want to be all you can be in the bbq world go here. Tell them Cheez sent you. There is more info about bbq on this site than most of the rest of them combined. Great bunch of folks willing to help too. There is also lots of info on how to modify your smoker to make it hold heat and cook better.

its a wealth of knowledge thats for sure and that is some fine looking pulled pork. Just needs a bit of slaw on top for me and I'll need 2 of them.

If you have any interest in a book you should pick up peace love and barbecue. great recipes and stories about all the barbecue restaurants across the country.
 
That really looks outstanding Channing! Anyone that has smoked butts before should be able to tell how tender and juicy yours is....congrats on joining the "Smokers Club"
 
Thanks Spur! I did a lot of research on different recipes and techniques. Just like anybody I guess, after some time I hope to settle in on a perfect recipe for me and how I like it. Working the Smoker was the hardest part for me. I hope to get better at that asap.
 
Fantastic looking "butt" you got there Channing, the pulled pics lookes awsum. Are you sure I didn't leave the butt in the smoker when you bought it?
 
God I hope not if he bought it 4 weeks ago and is just now getting the smoker out. That would be some nasty barbecue!!!

That is an aged "Butt", they are a lot better with age.emoLaugh </p>
 
Buddy, You know I will. We need to have anotther party at your dads.. That was an awesome time. Won't be long till the monday night fights. I suppose I'll be seeing you out there.
