Whew, I'm impressed... </p>

Take your favorite firm gamefish... I don't know this would be good with catfish due to texture.</p>

Ingredients:</p><ul>[*]1 tbsp olive oil[*]1 tsp of red pepper flakes[*]1/2 lb of fillets[*]1 cup raw fresh spinach[*]12 asparagus spears[*]2 quartersof Lime[*]Salt/Pepper to taste[*]Two 18 in sheets of Alum Foil[/list]

Mix Olive Oil and RedChili Flakes, and heat in microwave for 30 secs, let to the side for later</p>

Place half of spinach and asparagus in the center of alum foil sheets, place 1/4 lb of fillets on top. Pour half of chili oil and squeeze lime juice on each patch. Take alum foil and crimp "tent" style. </p>

Place in a 450 degree oven for 12 minutes. Unwrap, salt/pepper to taste and ENJOY</p>

190 cals/25 g protein/5 g carbs PER serving.</p>
 
Awesome recipe dude! I used Crappie and as usual I messed with the recipe a bit - added a couple cloves of minced garlic to the olive oil/pepper mixture, I pretty much add garlic to everything - when it was finished I opened up the top of the foil and sprinkled a light layer of parmesian cheese on top (bumps up the fat and calories a little bit but not too much if you don't overdo it) - turned the broiler on for a minute or so until the cheese just started to brown - be careful or you'll burn it real quick, DON'T walk away from the oven when the broiler is on or you risk torching it and filling your kitchen up with smoke! YUM!

and I can think of what to do with the other two quarters of limes, one in a Corona when cooking and the other in one with dinner...

Is two quarters, 50 cents of lime, or half of one lime?

Sounds like a recipe I need to try.
 
You got it just about right Puddle - except use 1/2 a lime per foil pouch (50 cents each according to R14). Cut up another lime in quarters and use two of them with a shots of tequila while cooking (you can sip it if it's the good stuff), then the other two quarters in a couple cold Pacificos with dinner :)
