This recipe is so intensely difficult I dont know how many of yall will be able to follow it! emoBigsmile </p>

I used the same breading that sir Cheez uses from Chatt. Rest. Supply downtown. It is a self-rising yella cornmeal. I am sure you can get it elsewhere NOT in the 25# bag I bought! LOL</p>

As long as your fish is not "dry" the meal will stick just fine by rolling it in meal. </p>

Fry until it is floating on top, (no longer!!,) depends on the size of the piece on how long it takes. I try to keep the oil from 350-400 degrees. (You MUST have a thermometer for this!) This keeps the fish from being oily as well. </p>

Dump on some paper towels to absorb a little oil that does come off and immediately sprinkle with a mixture of equal parts, salt, black pepper, garlic powder. (Mix it before hand and have ready!)</p>

Last step....EAT IT HOT!! Do not let fried fish sit, it gets rubbery and cold fast. This was key to the raves about the fish I got, cooking it while folks were in line filling plates made it just right. </p>
