a pickled jalapeno in the middle of the breast and wrapped in bacon is also tasty
 
Well thats just what i did... i went with the trusty ole bacon wrapped dove on the grill with some season-all salt and butter... they sure were good!!!

I tried a new one for the doves I got on opening day. Take the breast meat off the bone. Soak them in water for about an hour, then I put some wild game spice on them and marinated for 30 mins. Put an apple slice or a jalepeno in the center and wrap it all up with bacon, bake for 30 mins with some onions and a little butter. I used the apple slice cause the kids were gonna eat them to and cant take much heat. It really gave them a nice flavor. My new fav. way to cook dove.
 
that sounds good. i will have to try that if i manage to get any this weekend... i did take the meat off the bone when i cooked mine last nite... it was alot less work to eat them after they were done!!!!!
 
An old fella I know, used to always talk about frying dove breasts breaded in onion ring batter made by "Jiffy" I never tried it but sounds good.
 
Ive fried them in Cracker Barrel's onion ring batter and they were DElicious

My favorite though is bacon wrapped with jalepeno inside. marinated for an hour or so in Italian dressing and some worcheshire or liquid smoke
