With all the recipes on the other thread figured I'd start this being that its almost time to pull the grill out of hibernation...
Ok I have 2 recipes....

Grilled Striper
Lay striper fillets onto tin foil....enough to fold over and make a dome. Season with lemon pepper, seasoning salt. Add a splash of dale's. Add olive deliberately on the fish. This will keep it moist. Next add chopped bell peppers/onions on top of fish. Lightly season those as well and fold over tin foil to make a dome. Place your covered fish on the grill and wait for the magic to happen....

Blackened Crappie
This one is easy... Use an old black skillet if have one. Take crappie fillets and pat dry with paper towel. Make sure its dry! Lightly season with a little cajun seasoning. Next, season heavily with blackening spice. Repeat on the other side. Get your skillet nice and hot and add enough butter so that the entire bottom is covered. Lay your fillets in and let them darken on each side 3-5 mins.

Raw ;)

Take two sacalait fillets, and lay on a generous amount of tin foil. Take a small saucer, and put 3 tbs of evoo, and 1 tsp of crushed red pepper. Microwave the evoo for a minute, pour over fillets. Add 5 pieces asparagus, and a handful of spinach. Salt and pepper to taste, and make foil into TP around it. Bake for 15-20 mins at 350. Nummnumms
 
Here's my favorite for striper, or any fish for that matter. My boys will eat this every night of the week if it's made.

1/4 cup soy sauce
3 tablespoons brown sugar
3 tablespoons olive
2 tablespoons red wine vinegar
2 tablespoons white cooking wine
2 tablespoons unsweetened pineapple juice
2 garlic cloves, minced
1 1/2 teaspoons ground ginger

Marinade for a couple hours then grill over hot coals.
