So it begins. I really suck at wing shooting for the most part, but I try to hit opening day of dove every year to get the hunting season rolling. Usually hit twra fields in mcminn county, but this year I got invited to the govenors hunt in middle tn. Its a hunt they have held for the govenor of tn for over 50 years. Im looking forward to being part of that tradition.

From what I am told, everyone leaves with a limit. Someone please share a great recipe for dove other than wrapping in bacon and grilling.

Wrap in bacon and grill. Lmao!

I made a vegetable soup with them. Just braised the meat first with some oil salt and pepper. Turned out really good.
 
Take the dove breats, cut into thin strips, roll in flour with a little cajun, garlic and onion seasoning.

Cook them like you would chicken until brown. Cook slow, too fast and they will toughen.

While you are cooking them get you some Uncle Ben's Wild Rice, instant is best if you are like me. emoRedface Follow directions on package.

Now take all the grease out of the fry pan except a little on the bottom, take what is left of your flour mixture and sprinkle over the grease. Brown the flour in the grease. Now add milk, about a half cup to a cup and mix it with the flour. You are making a thick white gravy.

Now add your fried dove breasts to the gravy and serve it over the rice.(works with duck breast too.)

Mom used to make dove breasts in a heavy brown gravy with ground burger. Poured over buttermilk biscuits it was mighty good.

Been there done that too. emoThumbsup Sounds like your momma went to the same school of the south for cooking that I went to. My mom could cook anything that crawled, slithered or flew. She taught me. emoTongue Jmax

<font size="3" face="Georgia">I like to cut the Dove breasts in two and sautee them with terriacki and butter. Then pour the entire mixture over long grain wild rice and mushrooms. Add some steamed oriental veggies and a nice glass of your favorite beverage. I would suggest a nice Merlot, but everyone has their own favorite.</font></p>
 
I like to take the seeds from a fresh jalapeño, stuff it with creem cheese place it against the breast and wrap with thin cut maple bacon salt n pepper. And grill until bacon is done. Hate to give a bacon wrapped recipe but that's how I've alway eaten them.
 
the best way I found for me is take your finger an roll the meat off the cartilage it comes off easy dip it in egg an milk drop it in flower an deep fry them they are soo good you will have little dove nuggets
 
Here is one more but it takes a little time, depends on how much time you want to spend for the best results... emoAngel

Dove Casserole

8/10 doves. Skin taken off.
1 onion, Sliced
1/2 Chopped onion
2 ribs of celery chopped
1/2 Cup butter
1/4 Cup flour
6 oz. can of sliced mushrooms
1 and 1/2 Cup of milk
1 Table Spoon chopped parsley
1 and 1/2 teaspoon of pepper
1 package of wild and long grain rice (Works better on this one to now use instant)
1 package of slivered almonds

Boil the dove for about 1 1/2 to 2 hours with the sliced onion and celery. Cook rice according to directions on the box. In a deep skillet melt the butter, saute chopped onions and stir in flour. Add mushrooms and the liquid. Add milk, parsley, salt(to desire) and pepper. Add cooked rice. Take the meat from the bones of the doves, break breast meat into bite size pieces, add chunks to the other ingredients. Place in a greased or buttered 2 quart casserole dish, sprinkle top with almonds and bake at 350 degrees for about 25 minutes. Your ready to chow down my friend. emoHungry

This also works great with ducks, you can use two mallard size ducks or three wood duck size ducks. emoHungry
 
Simple but good. Works for dove, woodies or teal. De-bone breast, cut into strips and then 1/4 in cubes. Saute lightly with minced garlic, salt and pepper in REAL butter. Make linguine or whatever pasta you favor. Add whatever serving amount of the pasta to your sauted breast pan and allow to heat for a minute. Enjoy!
 
They cried their eyes out this weekend! Broke down and did 4 breast on the grill with cream cheese and bacon.

As I stated, I am not a good wing shot. And, with a bennelli semi auto. Every bird got 3 loads slung at it unless the first 2 got em. Me and my buddy shot 8 boxes of shells, we brought 30 birds home. It was a lot of fun, but my shoulder is blue. Everyone that hunted went home with a limit.

I bet your shoulder is black and blue this morning. emoLaugh Let see....that is 8 boxes with 25 per box, so 200 shells, getting 30 birds. That means you invested 6.67 shots per bird for a 15% hit ratio. emoRolleyes Sounds like a blast to me in more ways then one. emoTongue Jmax

P.S.; How many beers did it take?
 
Man, there is a LOT of air around those stupid birds! I usually hope for 3 birds per box, so you did well!!! emoToast
 
Glad you guys had a bang-up shoot! That's about the suitable kill ratio per box for me as well. I love the little dove nuggets fried in corn flour, or just marinatied in various mixes and grilled (no bacon). Have done a ton of them pan-fried in butter and spices as well. Bacon methods are great, but it always tastes like...bacon. emoHungry emoHungry emoHungry emoHungry

It took a 12 pack to get them all cleaned, but not a drop during the hunt. Considering we had twra, state senators, past govenors, and Haslam himself shooting in the field with us, beer was not an option. Plus I dont like to drink till the evenings when the sun goes down in most cases.

Knowing you beer had to be in there some place. After 12 I bet cleaning that last one took some effort. emoGrouphug Jmax
 
I wanted to go so bad but the news of Karl sorta hit me all wrong. I knew it was close and Richard did invite me to go. I need to try this whole wing shooting thing but it looks like I need to buy a few more boxes of shells too!
