I'm gonna take a leap here and I'm ready for the smart aleck remarks... I love to cook. Thought I wanted to be a chef at one time and managed a few kitchens as well as cooked in college.... I learned a basic pizza dough recipe and make my own. It's so easy and each pie costs about $3! My boys BEG me to make it and they really are better than domino's or pizza hut..... all you need is a pizza stone or a large, thin metal pizza pan you can get at any gormet or cooks shop. There's a nice one beside Eddie Bauer on Gunbarrel Rd.

Put ingredients in bowl in this order, bread machines are the best, but my kitchen aid mixer works a bit better. Before I had either, I just used a large mixing bowl and a spoon. Be sure to dust your hands in flour before you touch the dough.

1 cup, +1 tbsp luke warm water
2 tblsp olive oil
3 cups of all purpose flour - try different kinds... each is different and has a different consistency.
1 tsp salt
1 tsp sugar
2 1/4 tsp active yeast
Mix until blended thoroughly, don't touch or work too long. Then cover with a damp cloth in bowl and let stand for 1hr and 20min to allow it to rise. Then press out even on a pizza stone or pan by hand or even figure out how to toss it like you've seen done before! It's fun and the kids think you rock when you are tossing dough in the kitchen.
You can use the whole dough for a traditional, hand tossed sized pie or cut dough in half, roll out with rolling pin and make two thin crust pizzas. Our family loves the thin. I like the pizza stone by Pampered Chef, but a cookie sheet will work fine. If you greese it lightly you'll have a crispier crust but it's a little difficult to spread out the dough evenly. I sometimes have to use a glass to roll it out in a pan.
You CAN add items to the dough if you wish - italian seasoning, or crushed fresh garlic, or fresh basil shredded, or parmesean grated. Not very much of these condiments, a little goes a long way, but can spice up your regular pizza dough.

You can buy pizza sauce in a can, but it's quite easy to make.
Sauce-
1 can tomato sauce, 1 tsp italian seasoning, 1tbsp fresh garlic. 2 tbsp olive oil. Put oil in bottom of small sauce pan, heat on medium heat, add fresh garlic for 1 min, then pour in tomato sauce and spices. Bring to low boil and reduce heat to simmer for 15 min. Cool a bit before adding to dough. I usually make it while the dough is rising and sit aside.

Toppings - adding too much cheese can kill a pizza and is where most of the "grease" comes from, along with meats. Also, it makes the dough not cook thoroughly and will be doughy and not the best. So, use between 2-3 cups shredded mozzarella cheese, then we top with pepperoni and some browned bulk italian sausage. You can certainly figure out what other toppings you want.... bake on BOTTOM rack of oven for 20 min at 400 degrees.

It's a great pizza and you will screw up a few, but once you get a hang of it, you can feed an army for a little bit of dough! And you'll feel better about making it with the kids and not blowing $40 at a pizza parlor. But I'll try the Mellow Mushroom and the others and get back to you.... bet they are just like this one! Love to hear if any of you try this. It is so easy to do. Good luck and hope you don't mind my treading on your thread.

BTW, if ANYONE makes a trip to Memphis, Tennessee... And are looking for a good pizza place - Go to Memphis Pizza Cafe. It is great!! Best pizza I've ever had. There's several Memphis Pizza Cafe resturaunts in Memphis. 4 or 5 of them.

Spence.......you REALLY need a job.

J/k...thanks for the recipe. Isuggest youmightpost it to that forum?? I was actually looking for pizza joints though.

Unless you are suggesting I can stop by your house whenever I feel like it, order a pie with the toppings i crave at that moment, and you have it ready for me in 15 mins with a pitcher of cold adult beverage? emoBigsmile emoBigsmile
