Several years ago we killed 380 in one season. If you will pluck them and then smoke them they are excellent.
If we did not pluck them we just fellet the breast off marinated it overnight in Italian Salad dressing, wrapped bacon around them and put them on the grill good.
Another friend cuts the breast into strips, bread, and fry. He makes a dipping sauce out of grey poupon mustard and grape jelly excellent also.
 
<font face="georgia,palatino" size="2">Rangerman, I followed your directions with a few changes and it wasn't bad. I placed the breasts in red wine and left them for a day. Then I rinsed them and rolled them in olive oil, salt and pepper, and Italian dressing. Then I rolled them with bacon and placed them on a hot grill. Because I grilled them they were a little chewy but had a good taste. I think I can bake them in the oven, low and slow, and fix some of that. But, all in all, my first goose wasn't bad. Thanks for the help.</font>
 
Don't over cook a good rare med rare is were it's at. If you over cook they get tough and liver tasteing. We knocked down 2 yesterday with a bunch of about 20 that landed short. We also had a single in the spread but we were sleeping and the dog broke to wake us up.
 
I've tried a lot of different ways to cook goose, and not any of the recipies were palatable. The only way I could choke down some goose meat was when it was marinated in Tiger Sauce. It was edible, but not my favorite game, and I've eaten just about everything but coyote & armadillo.
Fishing this morning and several flew by at 20-30 yards about 15 feet off the water. Saw a lot sitting on the water.heard several shots, sounded like a 10 gauge.
good luck to all who shoot geese, for they are very messy birds, in my opinion.
 
Carl the key as stated before is not to overcook.

If you like to smoke meat try smoking a goose, the draw back is plucking. If you take the skin off and smoke it gets to hard.
 
The Geese around here (Chattanooga area) don't taste very good because they feed so heavily from the fescue on peoples lawns and on golf courses. This grass is full of fertilizers and pesticides. Geese from agricultural areas have a different taste. Sometimes we kill geese while duck hunting on Chickamauga, but rarely eat them. We either give them away or sometimes make jerky out of them. In my opinion, the key to cooking any wild game is to soak in saltwater. it pulls a lot of blood out of the meat. Its hard to make these geese around here fit to eat.
 
Went out Saturday and got a two man limit...and my first band.
