The next time you get a nice stripper and want to keep one here is a good recipe to try. Fillet the fish and remove all bones, than very carefully turn the slab on the side and cut out the red meat that is within the slab. If you leave it in it will taste very gamie. Take some red wine, white wine, or some beer for you really southern boys and mix it with two eggs. Let the fillet soak in it for a couple hours in the frig.

Now you take out the fillet and let it drip off but leave on some of it , it will be stricky. Roll the fish into a mixture of bread crumbs and lemon pepper lay it flat in a baking pan and put a coat of Citrus Grill mix on it (I get it at Sams). Bake it for about 30 Minutes and check it for done by taking a fork and if the meat is real white and flakie you are there. I like to take it out and put thin sliced tomatoes and onions on it and pop it back in the oven on broil and cook it a little longer until the tomatoes start to look burnt on the edges. Serve it with a little tarter sauce and your wife will think you are a gormet cheif.

Hey that sounds good. I love striper and have never tried it like that. I usually put it in some foil with butter, lemon, onion, and cook for 20 min. I will give yours a try and let you know...
