Simple but delish! Take fresh/frozen thawed Tilapia filets (this is one fish that freezes very well, so don't be afraid to buy frozen!) dry them thouroughly. Take a cup of italian breadcrumbs, add a teaspoon of lemon-pepper and a few dashes of garlic powder. Dredge the filets in the breadcrumb mixture. Don't worry about the filets being dry, you aren't looking for a heavy coating, as these fish really absorb any flavor added to them. In a non-stick sautee pan over med. heat, pour in enough extra-virgin olive oil to lightly coat bottom of pan. Let oil come to temp., drop in filets and cook both sides until golden brown. I eat this dish ALOT, use whatever seasonings you like to season your breadcrumbs, I promise you will not be disappointed! (Believe it or not Wal-Mart has an awesome deal on a frozen four pound box of individually wrapped filets. 11 dollars and some change) Comare that to 5.99lb at the fish monger!
